Jedi Sentinel (Damage): Jedi Sentinels are highly disciplined masters of lightsaber combat. Sentinels fight with two lightsabers and can build Focus quickly with Zealous Strike, unlocking the use of more powerful moves like Slash and Cauterize
Jedi Guardian (Damage, Defense): Jedi Guardians are stalwart defenders equipped with a single lightsaber and heavy armor. A Guardian can rend armor with Sundering Strike, protect allies with Guardian Leap, and those specialized in Defense act as lodestars and protectors on the battlefield."

The Jedi Knight is one of the two Galactic Republic-aligned Force-sensitive classes, along with the Jedi Consular. Famous Jedi Knights include Master Kao Cen Darach and Master Ven Zallow who were killed in the Fall of Korriban and the Destruction of the Jedi temple on Coruscant, respectively.
A Jedi Knight, in terms of standard MMORPG games, would be considered a primary damage class and/or tank. As such, the Guardian will have the abilities you'd expect and need to fulfill this role: snares, taunts, timered damage reductions, the ability to purge movement modifiers, etc.
Even in the most defensive specialization (Defense) the Guardian can do decent damage. In this spec, he also becomes very hard to immobilize and incredibly durable. The Defense Guardian is the quintessential damage sponge, key to raids and useful in PvP as well.
Vigilance is more offensive, but as a Guardian you still have very thick skin. The Vigilance Guardian focuses on point blank attacks, and has both high direct damage and sever periodic damage attacks. Until upper levels, you'll find yourself starved for focus. But by 50, as the class matures, you'll find yourself with more abilities to use than you can keep track of.
The Focus Guardian is also more offensive, but trades more medium ranged abilities for slightly lower damage output. It is a fair trade, as the flexibility of even a 10m range gives you freedom that the 4m melee range doesn't. It does mean that you're role is different though, more of a flank guard/harrier than the point of the spear. With the heavy armor of the Guardian though, it does mean that you can become the distraction that can't be ignored. You may find yourself in the company of Sentinels and Shadows more than other Guardians. For big fun, find a friendly Medic Commando to team up with.

Since the Treaty of Coruscant, the Sith have consolidated their military might, even while the Jedi have withdrawn to Tython, a move that’s been looked at with suspicion by many of the Republic’s politicians. Nonetheless, the war is far from over, and the Jedi Knight’s resolve remains firm. With unwavering allegiance to the Republic and the light side of the Force, the Jedi Knight fights with valiant determination, wading into the thick of any battle to protect freedom and democracy and hold fast against those who oppose it.
No matter how dire circumstances may become, the Jedi Knight trusts the Force and keeps a cool head. Knowledge and self-control are the critical components of wise decisions, and emotional and mental clarity are an absolute necessity. Maintaining focus allows the Knight to rely on intuition; a right mind leads to right action. For many, the Jedi Knight is the guardian of a precious dream; a dream of peace, a dream of justice, a dream of a brighter future. The fate of the galaxy depends upon the Knight’s ability to keep this dream alive.

Focusing body and mind, the Knight is capable of blasting opponents with a powerful wave of Force energy, knocking them off their feet. More powerful Jedi Knights have even been known to practice this technique against large groups. The Jedi Knight’s lightsaber techniques include powerful, synergistic combinations designed to render any enemy defenseless against a decisive finishing move. While completing this maneuver, the Knight is preparing to take on an additional enemy. Combining physical prowess and Force focus, the Knight can throw his lightsaber in spinning arc to strike enemies at a distance. Practice and mastery of this maneuver enables the Knight to ensure his saber returns to his hand after its lethal circuit.

These species are available to the Jedi Knight:
Sentinels are able to use two lightsabers to swiftly take care of any enemy that comes in their way. The focus this takes is immense and Sentinels do it with style. Sentinels perfect in physical combat and they are able to adjust to any physical situation using the Force and their knowledge of lightsaber fighting. The Watchman skill tree focuses on a melee style of fighting with a combination of focused mind abilities and physical attacks. The Combat skill tree lends itself towards lightsaber style fighting. The shared Focus skill tree focuses on force centric skills within combat.
Guardians like to wear heavy armor to defend themselves from any enemy attack. The use of the Force allows them to move quickly despite this. Guardians are the perfect Tanks as they can also taunt any enemies that may be attacking their teammates. Their trees are Defense (Tank) Vigilance (DPS) and Focus (DPS) which can be used by both the sentinal and guardian classes.

Both the Jedi Consular and Jedi Knight classes make use of the Corellian Defender-class Light Corvette, suitable for both aggressive action and more placid negotiations.
Developed at the height of the The Great War, the defender was custom-built for the Jedi Order. The Jedi Council commissioned the starship after determining Republic Military vessels were not well-suited to the Jedi's more specialized missions. The Defender's exterior design bases itself on the consumer model corvette, but it has been outfitted with countless customized upgrades.
Jedi Knights use a Focus system to fuel their abilities. Focus is generated by basic attacks and certain abilities such as Force Leap or Sundering Strike. Focus can be built up but it has a cap and it goes down slowly over time when out of combat. Use Focus wisely and it is very beneficial. Compared to a mana system which can run out completely during prolonged fights Focus can be constantly built up and long as you are alive you can get Focus. This makes the Jedi Knight (and his Sith Warrior counterparts) more and more important in larger and more protracted fights. When every other class is already having to conserve their remaining store of mana/power/heat/cells/whatever, your Focus bar is just getting full. Judicious use of abilities will allow you to keep it mostly full most of the time, so that when things get crazy you have powerful tools to bring to the party. A Jedi Knight can hold his own in a quick fight, but in the darkest of times it is likely to be the Jedi that's left standing alone to finish the fight when all else have fallen.
The Jedi Knights are highly skilled in melee combat. Focusing on Lightsaber combat, they can specialize in dual wielding combat as a Jedi Sentinel or develop a more defensive style as a Jedi Guardian.
